Although I’ve sometimes been a bidder at auctions, I’ve never actually been an auction item! But there I was on the silent auction table at the Palomar Health Night of Nights Gala.

“Lunch with Carol LeBeau at one of Escondido’s top restaurants!”

As the evening wore on, I began to panic. What if no one bid on #122?! I tried to get my husband to bid on me. No luck. “I can eat lunch with you whenever I want,” Tom reasoned. “That’s not the point,” I hissed! “What if no one makes a bid? My reputation’s at stake!”

Then, as I hovered nervously near the auction table, a smiling woman stopped at item #122… filled out the bidder form and saved the day!

Longtime Palomar Health supporter Shauna Schneider later invited two friends to join her and yours truly for one of the most delightful lunches I can remember.

Coast Bistro in Escondido provided our 3-course gourmet lunch. It was incredible. But the Coast Bistro experience actually began as we entered the door. The popular, new eatery is conveniently (I found a parking spot right up front!) located on Grand Avenue in the bustling village of Escondido.

Chef Barry Layne recently opened Coast Bistro with the hope of offering a casual, but refined dining experience. I’d say he’s got a winner! We were hooked by the 1st course! Warm, white asparagus and artichoke soup… a fresh salad of baby greens, beets, gorgonzola and pecans… all paired with a light Simi Sauvignon Blanc. Divine!

The pan-roasted Alaskan halibut was melt-in-your mouth incredible (with a little help from the lemon caper beurre blanc sauce!) French bean nicoise and roasted potatoes rounded out the main course. Everything was fresh and healthful… including dessert! Without a hint of guilt, Shauna, Cindy, Diane and I enjoyed strawberries and mango sorbet… hand-made by the talented Chef Barry.

Born and Raised in Escondido, Chef Barry has had an amazing career as master chef at many top California restaurants… including Ventana Inn in Big Sur, Jose Eber Café’ in Beverly Hills and as executive chef at Delicias in Rancho Santa Fe. Downtown Escondido is blessed to have him back home.

What a treat to have experience Coast Bistro for myself, and make three wonderful new friends at the same time. It’s all because of Shauna Schneider and her support of Palomar Health (and willingness to take a chance, and make a bid on auction item #122!).
