Dazzle ‘em With This Dip!

How’d you like to be the life of your next party? (And I don’t mean dancing on the table with a lampshade on your head!)
Seriously, next time you’re asked to bring an appetizer to a pool party, barbecue or special event, try this super-simple snack that will have everyone asking for the recipe!
I got it from my friend, Susan who got it from her friend, Peggy. From where it came before that, I have no idea. All I know is that this delicious dip is quick, easy, über healthy and will be the first to disappear from any buffet table.
Carol’s (and Susan’s and Peggy’s) “Favorite Fresh Cilantro Bean Dip”
1-Can Black Beans, drained
1-Medium Jar Favorite Salsa
1-White Onion, diced
1-Can White Shoe Peg Corn
1-Bunch Fresh Cilantro, chopped
Mix all ingredients together. Refrigerate. Use as salsa or dip. You can eat it right away, but it’s even better then next day!
Enjoy with your favorite whole grain tortilla chips. (I love Garden of Eatin’ Brand blue and yellow corn chips) I get them at Whole Foods Market, but they’re widely available.
So be a hit at your next party. Just be careful. This dip is so good, you’ll be eating it by the spoonful!
